Spicy beanburgers

These versatile veggie burgers go great with Free chips, or inside a wholemeal roll.

Serves: 1

Everything in bold is a Free Food - so enjoy as much as you like!

Preparation & cooking time: 25 minutes plus chilling

you will need...

1 carrot, chopped
100g/3½oz potato, peeled and chopped
1 red onion, finely chopped
1 red chilli, deseeded and finely chopped
100g/3½oz canned mixed beans, drained and rinsed
57g/2oz canned green lentils, drained and rinsed
1 egg
2 tsp ground cumin
1 tsp ground cinnamon
4 tbsp finely chopped coriander leaves
salt and freshly ground black pepper
Fry Light

  1. Place all the ingredients in a food processor, season well and blend until well combined. Transfer to a bowl and chill for 3-4 hours or overnight.
  2. Preheat the oven to 180°C/Gas 4. Divide the bean mixture into two portions and shape each into a burger. Place on a baking tray lined with baking parchment, spray with Fry Light and cook for 12-15 minutes or until golden.
  3. Serve with lots of Free Chips.

 

*Pregnant women, the elderly and babies should not eat raw eggs.
