Easy orange cheesecake

Scrumptiously citrusy, and creamy too!

Serves: 12

Preparation & cooking time: 20 minutes plus cooling and overnight chilling

you will need...

6 plain digestive biscuits, crushed
28g/1oz low fat margarine
2 tbsp orange juice
1 sachet sugar free orange jelly crystals
454g/1lb very low fat natural cottage cheese
454g/1lb very low fat natural fromage frais

  1. Mix together the crushed biscuits, low fat margarine and orange juice. Press onto the base of a 20cm/8 inch shallow dish.
  2. Make up the jelly with 284ml/ ½ pint of boiling water and set aside to cool. Put three quarters of the jelly, the cottage cheese and fromage frais in a blender or food processor and blend until smooth. Pour on top of the biscuit base and chill until set.
  3. Pour the remaining jelly over the top and refrigerate overnight. Divide into 12 portions before serving.
