Mixed berry ice cream

Enjoy this meltingly delicious treat, full of berry flavour.

Serves: 4

Preparation time:15 minutes plus freezing

you will need...

113g/4oz raspberries
113g/4oz strawberries
113g/4oz blackberries
6 tbsp artificial sweetener
2 tsp lemon juice
227g/8oz very low fat natural yogurt
strawberries, to decorate

  1. Put the raspberries, strawberries and blackberries in a blender or food processor with the sweetener for 1 minute to make a smooth purée. Push the purée through a fine nylon sieve into a bowl, to remove the seeds. Mix in the lemon juice and yogurt.
  2. Pour the mixture into a shallow plastic container, cover and freeze for about 1-1½ hours, or until almost solid. Blend the mixture in a food processor again for 1-2 minutes, or until smooth. Freeze for 3 hours, or until just frozen.
  3. Blend the ice cream again in the food processor until smooth and creamy. Spoon into bowls and serve immediately with the strawberries. Stand at room temperature for 10-20 minutes to soften suffi ciently to scoop before serving.
