Flame-grilled chicken sandwich

No ordinary chicken sandwich! This full-of-flavour snack will ensure you’re full of fibre and healthy all round!

Preparation & cooking time: 20 minutes

you will need...

For the salsa
1 plum tomato
2 tbsp each of finely chopped red onion and fresh mint
Juice of 1 lemon
Salt and freshly ground black pepper
For the coleslaw
4 tbsp finely grated carrot, 2 tbsp finely shredded cabbage and 1 tbsp finely sliced red onion
4 tbsp very low fat natural fromage frais
For the burger
4oz/113g chicken breast
Fry Light
2 slices wholemeal bread (400g loaf)
3 tbsp shredded iceberg lettuce

  1. Finely chop the tomato, mix in a bowl with the other salsa ingredients and set aside. Mix the coleslaw ingredients in another bowl and set aside.
  2. Place the chicken between 2 sheets of clingfilm and flatten with a rolling pin. Season, spray with Fry Light and grill, turning occasionally, until cooked.
  3. Toast the bread. Place a slice on a plate, top with the lettuce, chicken and salsa. Place the remaining toast on top and serve with the coleslaw.
